Simplest CNY Snacks to Make

We summarise the easiest recipes to follow so you don’t have to! Time to impress your aunties, uncles, nieces, and nephews with these goodies.

Peanut Cookies

4 cups ground roasted peanuts
1 cup powdered sugar (icing sugar)
1 cup peanut oil
2 tablespoons shortening
2 cups all-purpose flour
1 egg yolk, beaten slightly for egg wash
  1. Mix all ingredients (except egg yolk) until well combined.
  2. Shape into small balls and arrange on a baking sheet lined with parchment paper.
  3. Brush with egg wash and bake at 350°F (180°C) for 20 minutes or until brown.
  4. Remove from the oven and let cool.
Cornflake Cookies

1 1/2 cups smooth peanut butter 
1 cup packed brown sugar 
1 cup light corn syrup 
3 tablespoons butter 
7 1/2 cups cornflakes
  1. Add all ingredients except cornflakes in a medium saucepan over medium heat. Stir constantly, let mixture come to a boil until mixture is smooth and butter and sugar are melted, 1 to 2 minutes.
  2. Remove from heat and stir in cornflakes. 
  3. Use 2 spoons to drop mounds onto parchment or wax paper quickly. Press cookies together with the spoons to help pack the cookies together. Let cool for 20 minutes. 
Fried Crabsticks

1 packet of filament crab sticks
Peanut oil / Blended oil
  1. Defrost and unwrap crab sticks packaging. Unroll and peel into thin strips.
  2. Set aside or put in the refrigerator to air dry for around 2 hours.
  3. Heat a deep pan/wok with oil to 160℃-170℃, distribute strips evenly on hot oil, fry in small batches.
  4. Deep fry over medium heat until golden brown. Drain excess oil on the paper towel and allow them to fully cool before storing in an airtight container.
Kuih Bahulu

150g all-purpose flour 
180g sugar 
5 eggs 
1⁄4 teaspoon baking powder

  1. Bake sifted flour in a preheated oven at 220 degrees Celsius for 3-5 minutes.
  2. Heat sugar and remove once it begins to melt. Pour sugar into eggs and mix well, starting with the lowest speed and increasing gradually. Add baking powder to flour and fold into the batter.
  3. Heat brass mould with oil for at least 5 minutes at 200 degrees Celcius. Remove oil from the heated mould. Pour batter into it and bake for 8-10 minutes or until golden brown. Remove kuih bahulu and brush oil into the mould before proceeding with the rest of the batter. Allow to cool before storing them.
Butter Cookies

200g butter 
50g icing sugar (sifted) 
50g plain flour 
100g wheat flour or top flour 
50g corn flour
  1. Preheat oven to 180 degree celsius.
  2. Cream butter and gradually add in the sifted icing sugar and beat till pale and fluffy. Sift plain flour, wheat flour and corn flour twice. Fold the ingredients together with a spatula until it is well incorporated. Do not beat or over mix as you will not achieve the airy texture.
  3. Put the dough into a piping bag with star dip nozzle. Pipe the cookies onto the baking tray lined with baking paper. Leave 1 cm in between cookies as they will expand a little during baking.
  4. Bake for 15-20 minutes or until the cookies turn light golden brown. Leave it to cool on a cooling rack before storing them in air-tight container.
